Two Late Summer Cocktails
Oh, we know. Labor Day’s come and gone and you’ve already packed up your seersucker and madras. Even though the sartorial end of Summer has passed, it’s still warm enough to enjoy the fruits of the season.
Take summer cocktails for example.
Our friends at the Waldorf in NYC recently sponsored a friendly competition with their sister hotel, the Grand Wailea (from some other island called Hawaii), pitting honey harvested at each hotel against one another. One of the rounds featured cocktails, containing the prized nectar.
We managed to snag the recipes for the two featured cocktails (you’re welcome).
Waldorf Astoria Wax Poetic

- 2.5 oz. Zubrowka Bison Grass Vodka
- .75 oz. house made Top of the Waldorf Honey syrup (one half honey / one half hot water)
- .75 fresh lemon juice
Add ingredients over ice and shake. Strain into chilled martini glass with a blade of Bison grass garnish
Grand Wailea Beehave
- 1 dash Grand Wailea Honey
- 1/2 oz. Barenjager Honey Liqueur
- 1 oz. Ocean Vodka
- 2 oz. Pineapple Juice
- 1 1/2 oz. Lemonade
- 2-3 Mint Leaves
Add all ingredients plus cubed ice into shaker, pinching the mints leaves prior to adding. Shake vigorously and pour into rimmed glass. Top with Grand Wailea logo wooden honey dipper and orchid.
